Growing Microgreens: The Fastest Hydroponic Harvest You Can Make
Microgreens are seedlings harvested at 7–14 days, just after the first true leaves emerge. They're the fastest crop in home growing and one of the most nutrient-dense. This guide covers what they are, which varieties to start with, how to grow them without soil in a wicking tray setup, and how to time successive plantings for a continuous supply.

If you've never grown food before and want results fast, microgreens are where to start. In 7–14 days you go from seed to harvest - no waiting weeks for a lettuce head, no managing pH curves over a month. And what you harvest is, gram for gram, among the most nutritionally concentrated food you can grow at home.
What microgreens actually are
Microgreens are vegetable or herb seedlings harvested at a specific early stage: after the seed leaf (cotyledon) has expanded but at or just before the first true leaves emerge. This is typically 7–14 days after germination, depending on the species.
They're not sprouts (which are germinated seeds eaten whole, roots and all, without soil or media) and they're not baby greens (which are allowed to grow for 3–4 weeks and develop true leaves). Microgreens occupy the specific window between those two stages.
Why they're nutritionally exceptional
At the seedling stage, a plant has mobilized all the stored nutrients in its seed and converted them into early plant structures. The concentration of vitamins, minerals, and phytonutrients at this stage is dramatically higher per gram than in mature tissue.
USDA-supported research found that the most nutrient-dense microgreen varieties include:
- Red cabbage: 40× the vitamin C of mature red cabbage per gram
- Garnet amaranth: Highest vitamin K content measured
- Green daikon radish: Highest vitamin E and beta-carotene levels
- Cilantro microgreens: High lutein and zeaxanthin (eye health carotenoids)

Best varieties to start with
Fast and forgiving (7–10 days)
- Radish - the single best beginner microgreen. Germinates in 24 hours, grows vigorously, harvests in 7–8 days. Mildly spicy, beautiful purple-stemmed varieties available.
- Sunflower - large seeds, fast germination, produces thick, crunchy stems with a nutty flavor. Harvest at 10–12 days when cotyledons are fully open.
- Pea shoots - sweet and mild; harvest at 10–14 days. One of the most popular restaurant microgreens.
Medium-speed (10–14 days)
- Broccoli - mild, slightly nutty; among the most popular for cooking and smoothies.
- Kale - earthy, slightly bitter; more robust flavor than broccoli microgreens.
- Arugula - peppery and distinct; fast enough for beginners.
- Red cabbage - beautiful deep purple color, mild flavor, one of the highest vitamin C concentrations measured.
Slower or more finicky (14–21 days)
- Basil - requires warmth (75°F+), grows slowly, but exceptional flavor payoff.
- Cilantro - slow and needs more moisture management; worth growing once you have the basics.
- Amaranth - stunning red color, very fine seeds requiring careful planting technique.
Growing microgreens without soil: the wicking tray method
Most home microgreen guides use potting soil or coconut coir. A simpler approach for clean, soil-free growing:
Equipment needed:
- Two 10×20 inch trays (standard nursery flat trays; one with drainage holes, one without)
- Growing media: either fine coconut coir, hemp grow mats (specifically designed for microgreens), or jute mats
- A spray bottle or watering can with a gentle rose head
- Optionally: humidity dome for the first 2–3 days
Setup:
- Place the drainage-holed tray inside the solid tray (the outer tray holds water; the inner tray holds media)
- Cut hemp or jute mat to fit inside the inner tray, or fill with 1 inch of moistened coconut coir
- Pre-moisten your growing media before seeding
Seeding: Seed microgreens densely - this is different from all other growing, where you space plants out. Cover the surface of the tray completely with an even layer of seeds. Overlap slightly for radish, sunflower, and pea seeds. For small seeds (broccoli, kale), sprinkle to cover the surface visibly but without excessive piling.
Seed density per 10×20 tray:
- Sunflower: 200–250g
- Pea shoots: 250–300g
- Radish: 30–40g
- Broccoli/kale: 15–20g
- Basil: 10–15g
Days 1–3 (germination/blackout phase): Mist seeds thoroughly. Cover with the second tray (upside down) or a humidity dome to create darkness and maintain moisture. The pressure and darkness encourage strong, straight stem development and help seeds make good contact with the media.
Check once daily - if media surface looks dry, mist again gently. At day 2–3, most varieties will have begun germinating.
Days 3–14 (light phase): Remove cover when seeds have germinated and stems are pushing against the cover (you'll feel or hear the cover lift slightly). Move tray under light or to a bright window.
Water from the bottom: pour water into the outer (solid) tray rather than misting from above. This prevents damping-off fungal disease on stems and encourages roots to grow downward. Maintain about 1/2 inch of water in the outer tray; refill when empty.
Harvest: Cut with clean scissors just above the media surface when cotyledons are fully open and before true leaves emerge significantly (or right as first true leaves appear - personal preference). Harvest in one cut across the whole tray.
Rinse harvested microgreens with cold water, spin dry gently, and refrigerate in a paper-towel-lined container. Fresh life: 5–7 days.
Successive planting for continuous supply
Each 10×20 tray produces one harvest. To maintain a continuous supply, stagger plantings by 3–4 days:
- Tray 1 seeded Monday → harvest in ~8 days (fast varieties like radish)
- Tray 2 seeded Thursday → harvest following Thursday
- Tray 3 seeded Sunday → etc.
With three trays in rotation, you'll have fresh microgreens available almost every day. Total cost per tray harvest: approximately $0.50–$1.50 in seeds, negligible electricity.
