Amaranth microgreens are one of the most visually striking crops in the microgreen category, prized for their vivid magenta-red colouring and a nutritional profile that includes a complete amino acid spectrum from the amaranth seed. Unlike red lettuce where colour is triggered by light spectrum, amaranth's betalain pigments are temperature-dependent: warmer growing conditions produce the vivid red colour, while cooler environments produce yellower, less commercially attractive plants - regardless of any nutrient adjustment.

Deficiency Identification
- Pale yellow or orange (not vivid red) cotyledons: Growing temperature is too low. Raise ambient temperature to 24–26°C. This is a temperature issue, not a nutrient deficiency - no nutrient adjustment will produce red colouring at 18–20°C.
- Damping off or seed rot: Amaranth seeds are tiny and easily overwatered. Keep medium barely moist during germination; use a bottom-watering approach only.
- Uneven germination: Amaranth seeds need good surface contact with moist medium due to their small size. Press seeds gently into moist medium and ensure even moisture distribution.
- Leggy, stretched shoots: Insufficient light post-blackout. Move to 150–250 µmol PPFD immediately after uncovering.
Feeding Schedule Notes
Amaranth microgreens have a 10–16 day production cycle (longer than many microgreens due to their small seed size and slower initial growth). The most important environmental parameter is temperature: maintain ambient growing conditions at 24–26°C throughout, both during and after the blackout period. Betalain synthesis is directly temperature-dependent in amaranth, and the difference between 18°C and 26°C is clearly visible in finished product colour. Sow seeds densely but carefully (they are very small - approximately 1–2g per 10×20 cm tray is sufficient). Use bottom-watering only; surface misting easily oversaturates the fine medium around tiny seeds. Harvest at 10–14 days when cotyledons are fully expanded and magenta-red colouring has fully developed.
