Bell peppers are long-season fruiting crops that reward patient management with exceptional nutritional and flavour value, particularly when ripened fully on the vine. The nutritional gap between green and red bell peppers is one of the most dramatic examples of harvest-timing impact in any crop: the carotenoids and Vitamin C that define a ripe red pepper accumulate only during the final ripening phase, which requires 3–4 additional weeks on the vine after green-mature stage.

Deficiency Identification
- Blossom end rot: Calcium deficiency or antagonism from high K or inconsistent EC. Stabilise feeding, check Ca, improve airflow.
- Poor or blotchy colour during ripening: Potassium insufficient relative to nitrogen during the ripening phase. Raise K:N to 2.5:1 and increase EC slightly to 2.5–3.0 during colour change.
- Flower drop without fruit set: Temperatures above 32°C or below 15°C cause pollen sterility. Check ambient temperature first.
- Purple leaf undersides at seedling stage: Phosphorus deficiency, typically from cold solution. Raise temperature and verify P at 50–70 ppm.
Feeding Schedule Notes
Bell peppers require patience - most varieties take 90–100 days from transplant to first ripe fruit. Start seedlings at EC 0.8–1.2 and ramp to 1.5–2.0 in vegetative growth. At first flowering, switch to a fruiting formula with K:N 2.5:1 and raise EC to 2.0–2.5. As fruit turns from green to yellow/orange and finally red (colour change stage), raise EC to 2.5–3.0 and maintain high K to drive carotenoid synthesis. The additional 3–4 weeks of vine-ripening from green-mature to full red produces the 11x beta-carotene increase documented in the literature - this window cannot be replicated post-harvest. Solution temperature at 20–26°C; below 18°C stops fruit colour development. Trellis and support all major stems from week 4 onward.
