Tatsoi is a low-growing, dark-green Asian brassica with a mild mustard flavour and remarkable cold tolerance. It is one of the few hydroponic crops where cold reservoir temperatures are a deliberate flavour tool rather than a growth limitation: the same starch-to-sugar conversion that sweetens Brussels sprouts in frost and makes winter kale more pleasant can be deliberately triggered in hydroponic tatsoi by running cold solution. The result is a distinctly sweeter product from the same seeds.

Deficiency Identification

  • Bland or aggressively pungent leaves (opposite of sweet): Temperature management issue. Cold (8–12°C) sweetens tatsoi; warm (18–20°C) allows more pungent glucosinolate expression. Adjust reservoir temperature to target flavour profile.
  • Tip burn on inner rosette leaves: Calcium transport limitation. The low rosette form of tatsoi creates still-air pockets in the centre. Add airflow directed at canopy level.
  • Uniform young-leaf yellowing: Sulfur deficiency. Supplement MgSO4.
  • Slow growth at cool temperatures: Normal. Tatsoi at 8–12°C grows at 50–60% of the rate at 18°C; the slower growth concentrates sugars and reduces pungency. Allow extra grow time if cold-treatment approach is used.

Feeding Schedule Notes

Tatsoi is a compact, slow-to-medium grower with a production cycle of 35–50 days depending on temperature. Start at EC 0.6–0.8 and step up to 1.0–1.4 over the first two weeks. For standard production at 15–20°C, ramp to 1.2–1.8 at maturity. For the sweet cold-acclimated product: once plants are near full size (approximately 70% of harvest weight), lower reservoir temperature to 8–12°C for 5–7 days while maintaining nutrient concentration. This triggers the starch-to-sugar conversion documented in Brassica rapa cold-acclimation research. Return to normal temperature for final growth if additional bulk is desired, or harvest directly from the cold period for maximum sweetness.
