  • Normal: Bright, lemony, sharp flavour - sorrel's characteristic oxalic acid taste; mild sourness is desirable.
  • Normal: Arrow-shaped or rounded leaves depending on variety (French sorrel has rounded lobes; common sorrel is more arrow-shaped).
  • Worry: Intensely sharp, almost astringent sourness - oxalate very high in mature leaves; harvest much younger.
  • Worry: Flower stalk emerging from centre of rosette - bolting; pinch immediately or harvest all leaves.
