Sorrel is a perennial leafy herb with a distinctively sharp, lemony flavour produced by oxalic acid - the same compound that makes rhubarb tart. Its nutritional and flavour management are intertwined: the same variables (leaf age, harvest timing, growing temperature) that affect flavour intensity also affect oxalic acid accumulation. Young baby-leaf sorrel is both tastier and lower in oxalate than mature or bolted plants, making harvest timing the primary quality lever.

Deficiency Identification

  • Overly aggressive or unpleasant sourness: Leaves are too mature or plant is beginning to bolt. Harvest younger leaves (35–40 days) for more balanced flavour and lower oxalate.
  • Yellowing from oldest leaves upward: Nitrogen deficiency. Increase EC and confirm NO3-N is primary nitrogen form.
  • Bolting (rapid flower stem elongation): Temperature above 24°C or long photoperiod. Sorrel is a perennial but bolts under summer conditions; keep below 22°C and under 14-hour photoperiod.
  • Interveinal yellowing on new leaves: Iron deficiency. Check pH is below 6.5 and supplement chelated iron.

Feeding Schedule Notes

Sorrel establishes quickly and can be harvested repeatedly as a cut-and-come-again crop. Start at EC 0.6–0.8 and step up to 1.0–1.4 in the vegetative phase. For baby-leaf production (lowest oxalate, most delicate flavour), harvest outer leaves at 35–40 days before the plant reaches full size. For full-size leaves, allow to 50–60 days and ramp EC to 1.4–1.8; expect more pronounced sourness and higher oxalate content. Sorrel is a perennial and can be maintained in a hydroponic system for 12–18 months with regular harvesting; remove flower stems immediately as they appear to redirect energy into leaf production. Maintain solution temperature at 15–22°C.
