Endive, particularly Belgian endive (witloof chicory), is one of the most technically distinctive hydroponic crops because it is grown in two completely separate phases: an outdoor or greenhouse root-growing phase, followed by a hydroponic forcing phase conducted in total darkness. The forced chicons - pale, compact, bitter-sweet heads - are a prized culinary ingredient. Any light exposure during the forcing phase immediately triggers chlorophyll and glucosinolate production, turning the chicons green and unpleasantly bitter.

Deficiency Identification
- Green, bitter chicons: Light has entered the forcing chamber. This is the most critical management failure in Belgian endive production. Inspect and seal all light entry points. Any green colouring is a light-exposure issue, not a nutrient issue.
- Loose, poorly formed chicons: Forcing temperature too warm (above 18°C). Maintain 10–15°C throughout the 3–4 week forcing period.
- No chicon formation: Roots may not have received adequate cold vernalization prior to forcing. Chicory roots require 4–6 weeks at 4–6°C after harvest before they will force productively.
- Short, stubby chicons: Root quality insufficient or forcing EC too high. Roots must be full-size (15–25 cm, pencil-thickness or larger) for good chicon development.
Feeding Schedule Notes
Belgian endive production is a two-stage process. Stage 1: grow chicory roots in a standard hydroponic system at EC 1.2–1.6 for 120–150 days, then harvest roots and cold-store at 4–6°C for 4–6 weeks to complete vernalization. Stage 2 (forcing): stand roots vertically in a completely dark chamber with solution at EC 0.5 and temperature at 10–15°C. Cover tops with a light-excluding material to prevent any light reaching the forming chicons. After 3–4 weeks, compact, pale chicons of 10–18 cm will have formed. Harvest by cutting the chicon from the root at its base. The forcing chamber must be absolutely lightproof - even brief exposure during a brief check can begin greening the outer leaves within 24–48 hours.
