Fenugreek microgreens are distinctive for their intense maple-like aroma, produced by sotolon - a lactone compound that forms during seed germination from stored precursors. This aroma is entirely derived from seed biochemistry and peaks at the cotyledon stage, making fenugreek one of the most harvest-timing-sensitive microgreens. Germination uniformity is the key production parameter, as uneven germination creates a tray with plants at different sotolon windows simultaneously.

Deficiency Identification

  • Absent or weak maple aroma: Harvest timing missed. Sotolon concentration is highest at cotyledon stage (day 8–10) and declines as plants develop further. Next cycle, harvest earlier and ensure germination was synchronised.
  • Uneven aroma across the tray: Germination was unsynchronised. Pre-soak all seeds 12 hours before sowing to produce uniform emergence and a consistent sotolon window across the entire tray.
  • Bitter or unpleasant flavour: Normal fenugreek bitterness that increases as plants mature past cotyledon stage. Harvest earlier in the next cycle.
  • Mould on growing medium: Fenugreek seeds are mucilaginous when wet. Use low-moisture growing medium and bottom-water only; avoid misting. Ensure strong airflow post-blackout.

Feeding Schedule Notes

Fenugreek microgreens have a 10–14 day production cycle but a narrow peak-quality window. Pre-soak seeds for 12 hours in plain water before sowing - this is the single most impactful step for germination uniformity. Note that fenugreek seeds become mucilaginous (gel-coated) when soaked; drain thoroughly and spread quickly on the growing medium. Apply a light-pressure cover during the 2–3 day blackout period. After uncovering, place under 150–200 µmol PPFD. Target harvest at day 8–10 when cotyledons are fully open and the characteristic maple aroma is strongest. Do not delay past this point expecting additional flavour development - sotolon peaks at the cotyledon stage and declines from day 10–12 onward.
