Cooler reservoir temperatures (15–17°C) measurably increase sinigrin accumulation in mustard greens - for spicier leaves run cooler solution, not more sulfur.

Mustard greens are fast-growing, heat-tolerant brassicas with a distinctive peppery-to-fiery flavour profile driven by sinigrin and related glucosinolates. They mature quickly and can be harvested as baby greens in as little as 21 days. The key insight for flavour management is that glucosinolate accumulation responds more to solution temperature than to sulfur supplementation - a cooler reservoir is the most effective tool for spicier mustard greens.

Deficiency Identification

  • Loss of peppery heat in otherwise healthy plants: Check solution temperature first. At 22°C or above, sinigrin synthesis is suppressed regardless of sulfur level. Lower reservoir to 15–17°C for 5–7 days and assess.
  • Uniform young-leaf yellowing: Sulfur deficiency. Supplement with MgSO4 to restore SO4 levels.
  • Tip burn on inner leaves: Calcium transport limitation. Add airflow and check Ca concentration.
  • Early bolting: Temperature above 25°C or day length above 14 hours triggers bolting in most mustard varieties. Address temperature before adjusting nutrients.

Feeding Schedule Notes

Mustard greens are one of the fastest-cycling brassica crops - baby-leaf harvest at 21–28 days is practical from direct sowing. For full-size leaves, allow 35–45 days. Begin at EC 0.8–1.0 and step up to 1.2–1.6 after the first week. For maximum flavour impact, manage reservoir temperature: 15–17°C produces measurably spicier leaves than 22°C water, because cool temperatures promote sinigrin accumulation in much the same way frost enhances glucosinolates in winter kale. This is a more effective flavour intervention than increasing sulfur supplementation. Succession plant every 2–3 weeks for continuous harvest. Full reservoir changes every 7–10 days.

Research note: Reservoir temperatures of 15–17°C measurably increase sinigrin accumulation compared to warmer water at 22°C or above - temperature is more effective than sulfur supplementation for heat level.
