Hydroponics removes the variables that make Mustard Greens frustrating outdoors: inconsistent moisture, compacted soil, and seasonal weather. With precise pH, EC, and light control you can expect reliable, repeatable results year-round in an apartment or any indoor space.

Data point worth knowing: Mustard's heat is driven by sinigrin, a glucosinolate that converts to allyl isothiocyanate when leaf cells are damaged (cut or chewed). Cooler reservoir temperatures (15–17 °C) measurably increase sinigrin accumulation compared to warmer water (22+ °C), so growers wanting spicier mustard greens should run cooler nutrient solution rather than adjusting nutrients.

Key nutrients to monitor:

Keep pH within the stated range; nutrients become unavailable (locked out) when pH drifts even one unit outside the window. Check with a calibrated pH meter - pH pen strips are not accurate enough for hydroponics.


Step-by-step growing

  1. Direct-sow or germinate in plugs at 18–20 °C; emergence in 3–5 days.
  2. Transplant to NFT or DWC at EC 1.2, pH 6.5.
  3. Keep reservoir temperature at 15–18 °C for spicier, more flavourful leaves.
  4. Harvest baby leaves at 21 days or full leaves at 30–35 days, always cutting outer leaves first.
  5. Replace crop after 2–3 harvests as flavour becomes overly intense and leaves toughen.

Expected yield: 40–80 g per plant at baby-leaf stage; up to 200 g at full size

Regular harvesting is not just practical - it usually encourages the plant to produce more. Harvesting too infrequently often leads to bolting (in leafy crops) or quality decline.
