Perilla (shiso) is an essential herb in Japanese, Korean, and Vietnamese cuisine. Its unique combination of mint, anise, and basil-like flavours has no substitute, and it grows vigorously in hydroponic conditions similar to basil.

Hydroponics removes the variables that make Perilla / Shiso frustrating outdoors: inconsistent moisture, compacted soil, and seasonal weather. With precise pH, EC, and light control you can expect reliable, repeatable results year-round in an apartment or any indoor space.

Data point worth knowing: Perilla is highly sensitive to photoperiod: it will flower under any daylength shorter than 14 hours, making it a strict short-day plant. Indoor growers running 12 h light schedules will see perilla flower within 6–8 weeks of transplanting. Running 14–16 h delays flowering significantly and extends the vegetative harvest window to 3–4 months - the single most impactful adjustment a perilla grower can make is keeping lights on for at least 14 hours.

Key nutrients to monitor:

  • Perillaldehyde: primary aroma compound; higher at moderate EC (1.0–1.4) than at high EC
  • Anthocyanins (red/purple shiso): light-dependent synthesis - blue-spectrum LEDs enhance colour
  • Moderate nitrogen: supports leaf mass without diluting essential-oil content

Keep pH within the stated range; nutrients become unavailable (locked out) when pH drifts even one unit outside the window. Check with a calibrated pH meter - pH pen strips are not accurate enough for hydroponics.


Step-by-step growing

  1. Germinate seeds at 20–24 °C; perilla requires light for germination - do not cover seeds.
  2. Transplant to DWC or NFT at EC 1.0–1.4, pH 6.0.
  3. Set photoperiod to 14–16 h daily to delay flowering.
  4. Pinch growing tips when plants reach 20 cm to encourage lateral branching.
  5. Harvest individual leaves or stem tips; never remove more than 1/3 of foliage at once.

Harvest & nutrition

Harvest individual leaves for sushi, sashimi, and tempura. Young leaves have the most delicate flavour; older large leaves are better for wrapping and cooking. Perilla wilts rapidly - use immediately or store in a glass of water at room temperature for up to 2 days.

Expected yield: 25–45 g per plant per harvest; 3–4 harvests before flowering

Regular harvesting is not just practical - it usually encourages the plant to produce more. Harvesting too infrequently often leads to bolting (in leafy crops) or quality decline.
